No-Cook recipes for easy summer night dinners

It’s not only these mango recipe and dripping cake ideas that can help keep you cool this summer, avoiding a hot kitchen works too. If you agree then let the food do the work for you with these three simple no-cook recipes. You’ll have a scrumptious dinner ready in no time!

1. Tortillas

The first recipe is a simple Mexican unleavened flatbread made with either corn or wheat flour, toasted then stuffed with fillings of your choice. Sounds delicious, right? Try our version with smoked chicken, red pesto and cream cheese.

What you’ll need

  • tortilla
  • spreadable cheese
  • diced avocado
  • red or yellow bell pepper
  • smoked chicken strips or replace with tofu/ paneer
  • sun dried tomato pesto
  • lemon
  • salt and pepper to season

Method

  • Start by preparing your fillings. 
  • Take the avocado, peel and remove the pip, dice it into bite sized cubes. Halve your bell pepper and cut into thin strips. Slice your smoked chicken or paneer into strips too. Halve your lemon and cut the half into easy squeeze quarters.
  • If you choose to make your own tortilla try Just a Taste homemade flour tortilla recipe. Otherwise, remove your store bought tortilla from their packaging and either microwave the tortilla for 30 seconds or place them above a boiling water bowl until they soften. Additionally, you can substitute tortillas with large washed and dried butterhead lettuce leaves. As with the tortilla it’s important to soften your leaves in some boiling water for no more than 10 seconds.
  • Next spread your cheese onto one side of the tortilla, drizzle your pesto evenly over the cheese.
  • Take the rest of your fillings and pack them in a line down the centre of the cheese and pesto side. Don’t over stuff your tortilla otherwise it won’t roll nicely together.
  • Once you are happy with your filling amount, squeeze some lemon and season on top to taste.
  • Finish it off by rolling the tortilla from one side to the other, then tuck in the bottom edge to prevent your filling from falling out. Repeat the process if you want to make more and enjoy!

2. Poke bowl

Does smoked fish on a bed of crunchy vegetables drizzled with a tangy mayonnaise sauce sound good? This healthy Hawaiian recipe is perfect for hot summer nights.  Traditionally, served with rice our recipe opts for raw purple cabbage as a no-cook substitute.    

What you’ll need

  • Canned tuna fish or smoked salmon, paneer is good too
  • Carrots
  • Chilli pepper
  • Cucumber
  • Mayonnaise
  • Lemon juice
  • purple cabbage
  • Red onion
  • Sesame seed oil
  • Sesame seeds
  • Salt and pepper
  • Soy sauce
  • Sriracha sauce

 Method

  • Begin by thinly slicing the cabbage and carrots.
  • Finely chop the onion, cucumber, chilli pepper.
  • Cube salmon/paneer or shred canned tuna.
  • In a bowl whisk together sesame seed oil,soy sauce with a little water to dilute and set aside.
  • Take your bowl and layer the shredded cabbage at the bottom, sprinkle with some lemon juice and toss, next add the carrots, onion, cucumber, chilli pepper and finally your fish on top.
  • Pour your sesame seed sauce mix over as you would a salad dressing.
  • To end off, sprinkle some sesame seeds on top with salt and pepper to taste and drizzle over mayonnaise with a hot sauce such as Sriracha sauce. For an extra special twist, pair your poke bowl with some crisp white wine or a tropical juice like pineapple.

3. Open sandwich

We should all thank the Europeans for forgetting to close their sandwiches! Jokes aside, this style of sandwich has many variations from Danish smørrebrød to American open-faced sandwich. For a tummy filling option try our butter bean chilli and tomato version.

What you’ll need

  • Sliced bread
  • Canned butter beans
  • Cherry tomatoes
  • Chilli pepper
  • Cream cheese or double cream yogurt
  • Garlic
  • Hard cheese
  • Feta cheese
  • Olive oil
  • Lemon
  • Peppery lettuce like rocket
  • Salt and pepper

Method

  • Finely chop chilli, garlic and halve the cherry tomatoes.
  • Wash rocket lettuce and dry.
  • In a bowl add some yogurt/cream cheese, olive oil, with salt and pepper to taste. Whisk together and set aside.
  • Next gently stir in drained butter beans, chilli, garlic, half tomatoes and crumbled feta into yogurt/cream cheese mix. 
  • Toast your bread slices or keep them fresh.
  • Spread the mix onto your bread in a nice thick layer.
  • To finish, sprinkle over some grated hard cheese and place some rocket leaves on the side.
